Strawberry Sidewalks

 

1 lb short crust pastry

1 egg yolk, beaten

1 egg white, beaten

2 cups fresh strawberries

2/3 cup sugar

 

  • Preheat oven to 375 f.  Grease a cookie sheet.

 

  • Roll 2/3 of pastry into a 9x11 rectangle and place on a cookie sheet.  Brush edges with some of egg yolk, then fold over to make a ½ inch crust.  Brush pastry with egg white and then prick all over with a fork.

 

  • Bake 8 minutes.  Remove from oven and reduce heat to 350 f.

 

  • Wash, hull and slice strawberries.  Sprinkle with sugar and arrange over pastry.  Roll out remaining pastry and cut into ¼ inch wide strips.  Arrange over strawberries in a crisscross pattern.  Brush ends with remaining egg yolk and secure them to the crust.

 

  • Bake 20-25 minutes.  Cut into squares.  Serve hot or cold.
