Beef and Potato Loaf

 

4 cups raw potatoes, slices

1 tbsp, onion, cut up

1 tsp salt

1/8 tsp pepper

1 tsp parsley  flakes (optional)

1 lb ground beef

¾ cups evaporated milk

½ cup fine soda crackers crumbs

            or uncooked rolled oats

¼ cup ketchup or chili sauce

¼ cup onion, cut on

1 tsp salt

1/8 tsp pepper

 

 

Meatloaf bakes right over sliced potatoes. Arrange

potatoes and 1 tablespoon cut up onion in greased

2 quart baking dish. Sprinkle salt, pepper and parsley

flakes over potatoes. Mix rest of ingredients in another

dish. Spread evenly over potatoes. Put more ketchup

on top if desired. Bake at 350 F for about 1 hour or

until potatoes are tender.
