Good Neighbor Casserole
2 ½ lbs Lean ground beef
1 Large onion, chopped
1 tbsp Cooking oil
3 cups Spaghetti sauce, your choice
1 ¼ tsp Salt
¼ tsp Pepper
12 oz Broad noodles
12 cups Boiling water
1 tbsp Cooking oil (optional)
1 tbsp Salt
8 oz Light cream cheese, soften
1 ¼ cups Light sour cream
1 ¼ cups Creamed cottage cheese
1 ½ cups Grated medium cheddar cheese
Scramble-fry ground beef and onion in cooking
oil in frying pan
until beef is no longer pink. Drain.
Add spaghetti sauce, salt and pepper. Cook for
about 10 minutes
until heated through.
Cook noodles in boiling water, cooking oil and
salt in large
uncovered pot or Dutch oven for 5 to 7 minutes
until tender but
firm. Drain. Divide between 2 greased 2 quart
(2 L) casseroles.
Divide meat mixture over noodles.
Beat cream cheese and sour cream together in
large bowl until
smooth. Beat in cottage cheese. Divide and
spoon mixture over
each meat mixture. Smooth top.
Divide and sprinkle cheddar cheese over cream
cheese mixture.
Bake, uncovered, in 350 F oven for about 40
minutes until hot.
Makes 2 casseroles, 6 servings each.
