Tasty Lettuce Wraps

 

½ lb lea ground chicken

2 green onions, sliced

¼ cup diced celery

¼ cup diced red or green pepper

¼ cup coarsely carrot

1/3 cup thick teriyaki sauce

1 tsp chili paste (or 1/8 tsp cayenne pepper)

3 oz instant noodle soup, noodles broken up, seasoning packet discarded

12 iceberg lettuce leaves (see note)

 

 

Combine first 5 ingredients in 1 ½ quart (1.5L) microwave-safe

casserole. Cover. Microwave on high for 3 minutes, stirring at

halftime to break up chicken.

 

Add teriyaki sauce and chili paste. Mix well. Microwave,

uncovered, on high for about 1 minute.

 

Add noodles. Toss. Makes about 2 ½ cup filling.

 

To serve, spoon about 1 ½ tbsp into center of each lettuce leaf.

Fold up, envelope-style. Serves 2 to 3.

 

Note:

If leaves are quite large, tear in half, being sure the pieces are still

large enough to roll.
