Aunt Rita's Vegetable Soup

 

4 tbsp butter

1 med sized turnip, peeled chopped

6 medium-sized onions

2 tsp salt

4 tbsp chopped parsley

2 tbsp pepper

6 tbsp consommé undiluted (or 6 beef cubes)

4 tbsp olive oil

8 med sized carrots, sliced

1 bunch celery chopped

2 tbsp sugar

2 tbsp poultry seasoning

1 tbsp pepper

2 tbsp chopped chives

2-19 oz cans tomatoes

2 tbsp green pepper, chopped

1 tsp black pepper

 

 

In a large pot, sauté vegetables gently in butter and olive oil.

Add remaining ingredients and enough water to cover vegetables.

Simmer soup, uncovered, until vegetables are tender. Serve with

hot rolls. A meal in itself.
